This super easy recipe is a regular in my home. This Low Carb Creamy Tuscan Chicken is a great dinner recipe for entertaining as well as for a night in with the family.

Ingredients List

  • 4 Chicken Breasts (about 2 pounds)
  • Butter (or your favourite cooking oil)
  • Dijon Mustard
  • King Arthur Keto Wheat Flour
  • Salt
  • Garlic powder
  • Chicken Broth
  • Frozen Spinach (or fresh)
  • Sun-Dried Tomatoes
  • Heavy Cream

Equipment

  • Large Cast Iron Skillet

Ingredients

  • 4 Chicken Breast – Boneless, Skinless *about 2 pounds
  • 2 tbsp Butter
  • 1/3 cup King Arthur Keto Wheat Flour
  • 1/4 tsp Salt
  • 1 tsp Garlic Powder
  • 1/2 cup Chicken Broth
  • 1 cup Heavy Cream
  • 1/4 cup Sun-Dried Tomatoes (drained)
  • 1/2 cup Frozen Spinach (thawed and drained)

Instructions

  • Slice each chicken breast in half.
  • Use a meat mallet to tenderize if desired (I find this results in a more tender dish)
  • Melt butter in large cast iron skillet.
  • Mix the garlic powder and salt with the King Arthur Keto Flour and place in a dredging bowl.
  • Dredge the chicken breast pieces in the flour mix,
  • In the skillet cook the chicken until cooked through (internal temp of 170F)
  • Remove the cooked chicken from the pan and set aside.
  • Add the chicken broth to the pan and scrape any bits off of the bottom of the pan.
  • Add spinach, sun dried tomatoes and cr4am to the pan and whisk.
  • Bring the sauce mixture to a simmer
  • Add the chicken back into the pan and cover the chicken with the sauce.
  • Heat for a few minutes until the chicken is reheated.
  • Serve hot.

Choosing your pan

I find that using a cast iron pan provides more even heat than other types of pans. It also stays warmer longer, which prevents the need for reheating as often. Most cast iron pans have a deep side, which makes them perfect for dishes like this. If using an alternative pan, choose something with higher sides to prevent splattering and spills.

Substituting Sun-Dried Tomatoes

If you are substituting the sun-dried tomatoes, using fresh grape or cherry tomatoes roasted in the oven is a good option. The flavour will be less intense, and you may need to add some extra salt to the recipe.

To roast the tomatoes, wash them and then cut them into halves. Place them on a wire rack, face down. Sprinkle them with sea salt and bake them at about 250F for at least 2 hours and then press them down to remove liquid. Loosen them from the rack and flip them over. Bake for about 2 more hours.

For easy cleanup, place a sheet of parchment under the wire rack.

Using Fresh Spinach

I have found that about 1.5 to 2 cups of fresh spinach is equivalent to half a cup of frozen. These amounts can vary depending on the freshness and type of spinach.

Substituting the Butter

Recently I have been replacing some of my cooking oils with butter or Ghee. Feel free to use your favourite cooking oil in place of the butter. Use the same amount. Choose oil that is suitable for frying. (has a high smoke point)

Storing and freezing

This Low Carb Creamy Turcan Chicken freezes very well. Freeze in an airtight container for up to one month.

Store in the refrigerator for up to 3 days in an airtight container.
